Broccoli and Cheese Mashed Please Recipe | Idahoan On Your Table

My mother-in-law was the Best. Cook. Ever.  Mashed potatoes were a staple at each meal.  Creamy, fluffy, butter filled scrumptiousness.  But try as I might I never could replicate the texture or flavor of her mashed potatoes.  Epic fail.  Every time.

One day when grocery shopping I dropped some Idahoan Mashed Potatoes into my grocery cart.  I sneakily made them one night to accompany a roast.  My husband’s jaw dropped and he exclaimed “when did you learn to make proper mashed potatoes?!”  I just smirked.  It was months before he figured out I was actually using Idahoan ones and they weren’t made from scratch!

Just like her daddy, our daughter is a potato girl.  She loves potatoes; boiled, fried, baked, or mashed.  So when I got this HUGE package of Idahoan mashed potatoes for this post, I sent some pouches with her when she went back to college.  She and my husband were chatting online one day afterward and this is what she wrote:

Well then, that should be review enough, right?! I have a great recipe to share with you that I made using the Idahoan® Four Cheese Flavored Mashed Potatoes.  I brought it along to our friends’ home for Thanksgiving dinner and it went over really well.  It’s one of those dishes that the kids will eat even though it has broccoli in it, because it’s JUST that good.

Ingredients

1 4-oz package Idahoan® Four Cheese Flavored Mashed Potatoes
1 cup mayo
2 cans cream of broccoli & cheese soup
1 large bag of frozen broccoli, thawed and drained
2 cups shredded cheddar, divided
1 cup panko bread crumbs

Instructions

Preheat oven to 375°F.
Prepare mashed potatoes following package directions.
Mix with the mayo and soup.
Gently fold in the broccoli and half of the cheese.
Pour into a 9×13 casserole dish and top with remaining cheese and bread crumbs.
Bake for 30 minutes. Let sit for a few minutes before serving.

You’ll notice my recipe is slightly altered from the Idahoan website’s one.  I substituted the broccoli & cheese soup for mushroom soup, because my husband doesn’t like mushrooms.  Also I added an extra 1/2 cup of shredded cheddar (more cheese, more cheese!!), and I added the additional note of using ‘panko’ bread crumbs, because I used the normal kind and I felt they were too fine for the type of topping it should have created.  Also this makes A. Lot. of potatoes.  The recipe says it serves 4 but there were 7 of us at dinner and there were still leftovers, and everyone took a generous helping (some even two!).
